This is the perfect recipe for a rich cake batter you can use to make anything from healthy brownies or cupcakes to protein bars!
We made these from scratch when I didn't really have any food at home. No special equipment needed, just a spoon and two bowls. So chocolate-y and so good! 😛
INGREDIENTS
- 100g Almond Flour
- 100g Coconut Flour
- 150g Xucker light
- 30g Cacao Powder (10% off with code "ALEXA10")
- 1 tsp Baking Powder
- 200ml Plant-Based Milk (I used spelt milk)
- 60g Liquid Coconut Oil
- 1 tsp Vanilla Extract
OPTIONAL
Chocolate Protein (substitute 30g flour for 30g protein powder)
TOPPINGS
Shredded Coconut Flakes
Granola
INSTRUCTIONS
In one bowl, combine the dry ingredients. In another bowl, combine all the wet ingredients (with a spoon). Then add them to the bowl with the dry ingredients. Mix Cacao Nibs (and peanut butter, if desired) into the batter.
Pour the batter into baking cups to make muffins or cupcakes or onto parchment paper to make brownies or protein bars.
Bake at 175 degrees (Celsius) for 35 minutes or until crispy. Top with granola, shredded coconut flake or nut butter and enjoy! 😍
